The Little One LOVES Refried Beans. Actually he loves beans, but Refried appear to be his favorite. Knowing this, a few of the girls in my office gave me their mother's recipe for Refried Beans, and surprisingly the process is ridiculously easy. I made the beans yesterday in the crock pot and fried them this morning before work. If you love Refried Beans try this yummy recipe.
Toss the following into a crock pot and cook on high for 6 to 8 hours:
8 ounces of dried pinto beans
1/2 an onion coarsely chopped
A handful of garlic cloves
1/4 bunch of cilantro
salt & pepper
Fill the crock pot about 3/4's full with water
Cook and allow to sit overnight in the refrigerator.
Frying the Bean:
Bring the beans to room temperature, most of the liquid should have absorbed into the beans.
PLace the beans into a blender and pulse until the beans are a blend of smooth with bean chunks.
Warm a skillet over medium high heat and
cover the bottom with olive oil. Once the oil is hot, pour the blended beans into the skillet and stir while the cook. Cook for about 5 to 8 minutes. Remove from the stove and enjoy.
